Chicken zakolot is the Ukrainian dish.
It is a very tasty cold appetizer which is similar to holodets in its recipe. However, zakolot differs somehow from kholodets. It includes ceps. The recipe is rather time-saving but the result is worth trying.

This Ukrainian pork delicacy is a perfect idea for family gatherings. It is nourishing and light at the same time.
It is recommended to serve chicken zakolot with mustard or horseradish sauce.
Ingredients:
- 2-3 bay leaves
- 1 medium carrot
- 1,5 l (liter) water
- 100 g (3.5 oz) ceps
- 1 tbsp + 1 tsp gelatin
- 1 kg (2,2 lb) chicken
- 1 medium bulb onion
- 1/2 cup of chicken broth
- 1 tbsp chopped parsley root
- black ground pepper – to taste
- salt – to taste
Cooking
Wash chicken, cut it into medium pieces, and put in a pan with cold water. Bring the water to boil and cook the meat over low heat for 2 hours. Skim off the foam from time to time.
In 1 hour before the end of boiling, add peeled and washed whole onion and carrot, rinsed and peeled parsley root, bay leaves, salt, and pepper. Stir all the ingredients and continue to cook.
Transfer the boiled chicken to a cutting board. Let the meat cool and chop it finely.
Rinse and boil ceps in a separate pan for 15-20 minutes. Cool the mushrooms and cut them finely. Add the ceps to the chicken broth.
Pour half of the chicken broth in a bowl and soak the gelatin there. Then add the broth to the pan and cook it, without bringing the mixture to boil. Then filter the mixture.
Put the chicken meat into deep bowls. Season the meat with pepper and pour the broth above. Place the dish in a fridge until it sets completely, for 2-3 hours.
