Kutia

Kutia is a traditional dish on Christmas Eve. People usually begin or end their repast by eating this dish. The main components of kutia are wheat berries, more rarely barley is used. Ukrainians also began to make kutia of rice. All products which are the ingredients of kutia have symbolic meanings. The poppy seeds symbolize prosperity, honey stands for a sweet life after death, wheat berries are the symbol of life after resurrection. Follow the recipe to cook delicous wheat berries with walnuts and golden raisins.

We propose you to cook aromatic, tasty and “rich” kutia. Such a kutia is called “rich” while it contains poppy seeds, walnuts, raisins and honey. It is widely thought that the more components kutia has the more big welfare and heavy crop the family will have.

Ingredients:

  • 150 g (5 oz) wheat berries
  • 100 g (3,5 oz) poppy seeds
  • 100 g (3,5 oz) walnuts
  • 100 g (3,5 oz) golden raisins
  • 3 tbsp honey
  • a pinch of salt

Cooking

Boil wheat berries until ready (it will take approximately one and a half hours). Pour poppy seeds with 1 glass of boiling water. Steam them for 30 minutes. Chop walnuts and fry them on a dry frying pan for 4-5 minutes until pleasant walnut smell appears. Pour raisins with boiling water. Wait 10 minutes. The dry raisins on a paper towel.

Pour off water from a pan with poppy seeds and mince them three times. You can also use blender or mortar poppy seeds. The principal thing is to get opium milk.

Combine cold wheat berries, walnuts, raisins, poppy seeds, honey and salt. Mix the ingredients thoroughly.

You can keep kutia in a fridge for 1-2 days.
