Pumpkin, cheese, and apple pie

This awesome pumpkin pie for Halloween is sure to amaze your family and friends.

Only imagine – autumn taste and flavor in one dish.

The pumpkin is perfectly combined with apples and cheese while cinnamon and vanilla scent makes this dessert mouth-watering.

Ingredients:

  • 2 eggs
  • 1/2 lemon
  • 3 tbsp raisins
  • 8 sour apples
  • 4-6 tbsp sugar
  • 1,5 tsp vanilla
  • 5 tbsp semolina
  • 3 tbsp ground croutons
  • 2 tbsp ground cinnamon
  • 1 kg (35 oz) peeled pumpkin
  • 500 g (1,1 lb) cottage cheese
  • breadcrumbs (for covering)
  • dairy butter (for greasing)

Cooking

Boil cubed pumpkin until done. Transfer it to a colander and let the water drain. Combine 2-3 tbsp of sugar and semolina. Add the mass to the pumpkin and stir until smooth. Leave the ingredients for 20 minutes to let the semolina swell.

Squeeze half of the lemon. Wash and peel apples. Cut them into medium pieces and add to the lemon juice.

Grease a baking tray with melted dairy butter and cover it with breadcrumbs. Add vanilla, 1 egg, and 3 tbsp of ground croutons to the pumpkin mass.

Stew the apples in a dry frying pan until they become soft.

Arrange the pumpkin mass on a baking tray and top with 1 tbsp of cinnamon. Put the apples above and add 1 tbsp of cinnamon.

Separate yolk from the egg white. Put the white of an egg in a fridge. Combine cottage cheese with 2-3 tbsp of sugar and the yolk. Put raisins in a bowl and pour them with hot boiling water. Leave the raisins for 10 minutes and then drain the water. Add them to the cheese mass. Beat the white of an egg to a stiff peak and add it to the mass. Mix everything carefully.

Put the cheese mass above the apples and put the pie in the preheated oven. Bake the dessert at 200°C (392°F) for 25 minutes. You may cover the pie with foil and then remove it at the end of baking. The pumpkin pie for Halloween is done.
