Rhubarb kvas with cinnamon and raisins

In addition, rhubarb stems enrich the kvas with various vitamins, microelements, and make it more delicious and healthy.


  • 10 raisins
  • 1 tsp cloves
  • 2 tsp cinnamon
  • 150 g (5 oz) sugar
  • 2,5 l (liter) of water
  • 10 g (1 tbsp) dry yeast
  • 500 g (1,1 lb) rhubarb stems


Wash rhubarb stems under a water stream and dice them. Put the rhubarb in a big pan and power it with water. Bring the water to boil. Add cloves and cinnamon. Mix the ingredients and boil them for 10 minutes.

Filter the drink and add sugar. Stir until the sugar dissolves completely. Then let the kvass cool. Add dry yeast, mix everything, and cover the pan with a linen napkin. Put the pan in a warm place for a period of twenty four hours (the fermentation process should begin).

Prepare plastic bottles. Put rinsed raisins inside each bottle. Pour the kvas into the bottles and put them in a fridge. Let the drink ferment for a day and night more. Then you can serve this astonishingly flavorful rhubarb drink.

Store the rhubarb kvas in a cool place.
