It is very unique, unusual, and tasty beef soup with potato, onion, and tomato. This soup in bread will be especially appropriate in cold and rainy weather. You can cook the bread by yourself or simply buy it. Enjoy this tasty Ukrainian traditional dish.
Ingredients:
- 1 kg (2,2 lb) flour
- 1 package of dry yeast
- 1 tbsp salt
- 1 tbsp sugar
- 1 tbsp sunflower oil
- 500 g (1,1 lb) beef
- 2 bulb onions
- 3 potatoes
- 3 tomatoes
- 1 bell red pepper
- 2 cloves of garlic
- 3 tbp paprika
- parsley – to taste
- tomato paste
Cooking
Combine flour, dry yeast, sugar and salt. Stir the ingredients and add water gradually. Knead dough, cover it with a damp napkin and leave for 15 minutes.
Flour a table and place the dough there. Knead it for 1-2 minutes more. Form some “pellets” and place them on a baking sheet covered with parchment paper. Dispose them on a rather big distance from each other.
Let the dough arise twice. Preheat the oven to 200°C (392 F). Place the sheet in the oven and bake the bread for 50 minutes. After cool it. Cut out the top of the “buns” and notch out the bread crumb.
Peel and squeeze garlic. Cube a pepper. Peel potatoes and chop them. Cut beef into cubes with 2-3 cm size each. Place tomatoes in a boiling water for some minutes. Then peel them and cut the pulp. Peel and cut bulb onions finely.
Heat sunflower oil in a wok and cook the beef all round. Then fry the bulb onion until it becomes golden. Add paprika, tomato paste and fry the ingredients stirring them continuously.
Add paprika with onion to the wok. Pour the ingredients with warm water. Water should cover the meat evenly. Stew the beef over high heat for about 2 hours. If water evaporates then add it from time to time.
At the end of cooking, add 1/2 liter of water, the prepared potato and pepper. Boil everything for 10 minutes. Then add tomatoes and stew them for 5 minutes. Add garlic, spices, and chopped parsley. Cook the dish 3 minutes more.
Serving
Preheat the oven to 200 °C (392 F) and warm the buns for 2-3 minutes. After pour the hot soup there and serve it.
