Fish and rice pie

There are certain days when only cozy dishes will do. Full of delightful ingredients, this mackerel pie with rice, onion, dill, and parsley is the ultimate comfort food. There is something homely about the dish.

Tender inside, crispy on the top and simply delectable all the way through.

In addition, this satisfying weekend meal can surely feed all your family.

Ingredients:

  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 bulb onion
  • 1 cup of rice
  • 3 cups of flour
  • 3 tbsp vegetable oil
  • 5 tbsp compressed yeast
  • 100 g (3,5 oz) margarine
  • 300 g (10,5 oz) mackerel fillet
  • fresh parsley – to taste
  • fresh dill – to taste

Cooking

Wash rice thoroughly and boil it in salted water until done.

Combine 1 cup of warm water with compressed yeast and 1 tsp sugar. Mix the ingredients and leave the mixture in a warm place. Stir in flour and then add salt, vegetable oil, soft margarine, and the remaining sugar. Knead the dough carefully and leave in a warm place to let it rise.

Cut the mackerel into medium pieces and fry the fish until golden. Peel and wash a bulb onion. Cut it into semi-circles and brown slightly.

Stir the dough and leave for 20 minutes more. Then divide the dough into 3 parts – first and second parts should be bigger than the third one.

Dredge your table and roll the dough. Arrange the first crust on a baking tray greased with oil. Put rice and onion above. Then add rinsed and finely cut dill and parsley.

Put the second crust above. Arrange the fried fish on it. Top the pie with the last crust.

Make some little cuts in the pie. Leave it for 15 minutes and put the pie in your oven preheated to 200°C (392°F). Bake the pie until baked through, for about 20 minutes.

You may check whether the pie is cooked or not with the help of a toothpick. If the pie is dry, then it is ready for serving.
