There are dozens of Ukrainian recipes for liver dishes. We boil, fry, and stew liver. We cook liver pies, pates, pancake pies, fillings for pastries, and more.
Liver is very healthy food which is filled with vital vitamins such as A, B1, B6, B12 as well as nutrients, namely copper, iron, folic acid, etc. In addition, beef liver contains the same amount of protein as beef meat.
Not everybody likes liver yet when properly cooked and combined with special ingredients, beef liver can become an elegant and delicious appetizer anybody will enjoy. For instance, today we are going to make liver-egg balls which are so tempting that you will not resist the temptation.
Ingredients:
- 6 eggs
- 300 ml milk
- 2 bulb onions
- 450 g (16 oz) beef liver
- margarine – for frying
- black ground pepper – to taste
- fresh parsley – to taste
- mint leaves – to taste
- basil leaves – to taste
- salt – to taste
Cooking
Wash liver thoroughly and cover it with milk for 1,5 – 2 hours. Pour off the milk, slice the liver and place it in boiling salted water. Boil the liver. Peel bulb onions, wash and slice them. Preheat margarine in a frying pan and brown the onion slightly.
Boil 2 eggs, cool, peel, and chop them. Combine the liver, onion, and eggs. Mince the mixture.
Adjust salt and pepper to your taste. Then add 2 raw eggs and whip the mixture until smooth. Shape the mixture in the form of balls.
Boil two remaining eggs. Peel the eggs and chop the yolks finely. Top the balls with the yolk mixture.
Arrange the appetizer on a serving plate and decorate it with washed parsley, mint and basil leaves.
