Cabbage rolls with potato and mushrooms

 

Today we invite you to cook yummy Ukrainian holubtsi with lean yet very nourishing filling made using potatoes and your favorite mushrooms. The recipe is lent-friendly and easy-to-follow, so it deserves your attention.

Ingredients:

  • 1,5 kg cabbage
  • 750 g potato
  • 1 carrot
  • 2 bulb onions
  • 250 ml tomato juice
  • 200 g fresh mushrooms
  • 1 tsp sugar
  • vegetable oil – for frying
  • black peper – to taste
  • salt – to taste

Cooking

Make filling

Peel, wash, and dice bulb onions. Wash, peel, and rub carrot on a medium grater. Wash, peel, and cut mushrooms. You can use any mushrooms you like. If you have dried mushrooms, then soak them in water beforehand. Bring water to a boil and cook mushrooms until soft.

Preheat vegetable oil in a frying pan. Add the onions and carrot. Then, sauté the veggies for 5-7 minutes. Add the end, add boiled mushrooms, and golden brown the mixture. Set aside to cool.

Wash and peel potatoes. Then, shred them on a coarse grater. After, add half of the fried vegetables to the grated potatoes. Stir in salt and pepper. Finally, mix the mass carefully.

Shaping holubtsi

Wash the cabbage and separate the cabbage leaves. Steam them in boiling water for 5-10 minutes. Check when leaves become fork tender. Then drain them and plate them on a board to cool. Afterward, cut off the rough ribs.

Place a cabbage leaf on a board and add a spoonful of the filling. Roll the cabbage roll, tucking the edges, so the filling does not fall out. Repeat until you use all the cabbage leaves. Place the stuffed holubtsi in a pot covered with cabbage leaves beforehand.

Add tomato juice or diluted tomato paste, water, salt, and pepper to the rest of the fried vegetables and mushrooms, bring to a boil, and pour above the cabbage rolls. Add enough water to cover the cabbage rolls.

Cover the top of the cabbage rolls with cabbage leaves and simmer for 40-50 minutes until cooked, covered.
