We are going to roast juicy and tender fish with vegetables – carrots, onion, and tomatoes. Both the vegetables and fish get the benefits of their flavors melding together while cooking side by side. Who can resist such a tempatation?
- 3 carrots
- 1 bay leaf
- 4 tomatoes
- 2 bulb onions
- 60 ml vegetable oil
- 1/2 bunch of parsley
- 700 g (1,5 lb) pike perch
- black ground pepper – to taste
- salt – to taste
Wash parsley and dry it. Peel bulb onions and cut them into medium pieces. Combine the parsley and onion. Place them in a blender and blend. Wash, peel, and slice carrots.
Cut the pike perch into portion sized pieces. Rub the fish with salt and pepper. Grease a baking tray with vegetable oil. Arrange the pike perch there. Add the onion, parsley, carrot, and bay leaf.
Wash tomatoes and cut them into wedges. Place the tomatoes in a blender and blend until puréed. Then add vegetable oil and salt. Stir to combine.
Pour the prepared tomato sauce above the fish and vegetables.
Bake the ingredients in an oven until cooked through, for 40 minutes.
