Lemon curd cookies


  • 200 g curds
  • 1 medium lemon
  • 250 g flour
  • 200 g margarine
  • 150 g caster sugar
  • 2 tsp baking powder
  • 1/2 tsp soda
  • 1 tsp vanillin
  • 50 g sugar


Peel the lemon and squeeze the juice. Combine curds, margarine, vanillin, caster sugar, lemon rind, and 3/4 of lemon juice. Mix the ingredients with blender. Then add flour, baking powder, and soda. Mix everything with mixer again. The pastry is ready.

Shape the flat cakes from the pastry and place them on the baking tray covered with baking paper. Pour the cakes with lemon juice and powder them with sugar. Bake the cakes at 180°C for 10-15 minutes.
