Marinated Honey Mushrooms

We will marinate these tiny mushrooms in a zesty mix of black pepper, bay leaves, garlic, and apple vinegar, all of which give these mushrooms a wonderful depth of flavor!

These tangy mushrooms are a very versatile dish. They work well as a side dish and appetizer. They can also be served with salads, meat dishes, and veggies or simply as a snack themselves.

If you are cooking these marinated mushrooms for a dinner party, barbecue or picnic, double everything, cause they will be eaten in just minutes.

Ingredients:

  • 1 tsp sugar
  • 3 bay leaves
  • 1-1,5 tbsp salt
  • 3 cloves of garlic
  • 7-8 black peppercorns
  • 5-6 tbsp apple vinegar (6%)
  • 1 kg (2,2 lb) honey mushrooms
  • sunflower oil (for serving)
  • spring onion – to taste

Cooking

Wash fresh mushrooms thoroughly. Pour water in a big pan and bring it to boil. Add mushrooms and cook them for 20-30 minutes. Skim off the foam during a boiling process. Then transfer the honey mushrooms to a colander and let the water drain.

Let’s cook the marinade. Pour 2 cups of water in a pan. Add sugar, salt, peppercorns, peeled and chopped garlic, bay leaves, and vinegar. Mix all the ingredients thoroughly. Cook the mass for 5 minutes. Then pour the marinade above the mushrooms and boil them for 10 minutes. Arrange the mushrooms in sterilized jars. Pour the marinade above and cover the jars with plastic caps. Leave the mushrooms until complete cooling.

After marinating, serve the mushrooms with a little bit of sunflower oil and chopped spring onion.
