Orange and lemon roasted duck

The Thanksgiving Day is coming soon and here is a great recipe for roasted duck with citrus and celery to treat your relatives and friends.

Lemon and orange impart the duck interesting flavor tones.

Honey and wine give it marvellous sweet taste and help deepen the aroma of citruses which will fill your kitchen while baking.

Crisp skin, moist and tender meat, what can be more delicious?

Ingredients:

  • 1 orange
  • 2-4 celery stalks
  • 2 kg (4,4 oz) duck

Marinade

  • 1 lemon
  • 1 orange
  • 1 tbsp salt
  • 1 tbsp olive oil
  • 1/2 tbsp oregano
  • 1/2 tbsp black ground pepper

Sauce

  • 1 orange
  • 2 tbsp honey
  • 2 tbsp sweet wine

Cooking

Wash an orange and a lemon. Squeeze juice. Add salt, black ground pepper, oregano, and olive oil.

Wash and clean the duck. Place the meat and marinade into one pan for 1-6 hours. Turn over the duck from time to time.

Rinse an orange and cut it into quarters. Wash celery stalks and cut them into medium pieces. Grease a baking tray with vegetable oil and transfer the duck there. Put the orange and celery inside the duck.

Preheat an oven to 190°C (374°F) and bake the duck, baking time – 30 minutes for each 500 g (1,1lb) of duck. At the end of baking pour the duck with the emerging juice.

Wash the second orange and squeeze it. Combine the juice with sweet wine and honey in a pan. Boil the mixture until it decreases in volume twice and its consistency will be like a syrup has.

Let the baked duck cool for 10-15 minutes. Throw off the celery. Transfer the duck to a serving plate and pour the syrup above. Decorate the duck with lemon and orange slices.
