Pancakes with asparagus, cheese and ham

Today we offer you to make delicious pancakes with a flavorful filling. The combination of asparagus, two types of cheese and ham. Yummy, nourishing and healthy! Let’s try to cook and impress your guests!

Ingredients:

  • 3 eggs
  • 2 tsp salt
  • 450 ml milk
  • a pinch of sugar
  • 1/2 tsp lemon zest
  • 250 g (1/2 lb) flour
  • 1 kg (2,2 lb) asparagus
  • 55 g (2 oz) dairy butter
  • 55 g (2 oz) smoked ham
  • 85 g (3 oz) hard cheese
  • 500 g (1,1 lb) soft cheese
  • 1 tbsp chopped fresh dill
  • black ground pepper – to taste

Cooking

Rinse, peel and slice asparagus. Pour water in a pan, add salt, sugar and dairy butter. Mix everything and bring water to boil. Boil the asparagus until soft, for 15 minutes. Then transfer it to a colander and let drain.

Pour 500 ml of the broth in a separate big bowl. Add 200 g of flour, 350 ml of milk, eggs and a pinch of salt. Stir the batter carefully. Heat dairy butter over high heat in a skillet. Pour the batter mix there, swirling it around the skillet so it reaches the edges. Fry a pancake for a couple of minutes, then turn it over and cook the other side. Cook the pancakes until you use all batter. You should get 8 pancakes.

Grate soft and hard cheese. Mix the prepared cheese, salt, pepper and dill until well combined.

Preheat the remaining dairy butter and sauté 50 g of flour. Dissolve it in the asparagus broth combined with the remaining milk. Boil the mass for 5 minutes. Adjust salt and pepper to your taste. Sprinkle with lemon zest. Set aside for a while.

Preheat an oven to 250°C (482°F). Pour half of the prepared sauce in a casserole dish. Grease each pancake with the cheese mass. Put the ham and asparagus above. Fold up the pancakes neatly and place them in the casserole dish. Pour the remaining sauce over the dish. Bake the pancakes for 10 minutes till golden on top. Transfer them to plates and serve immediately.
