Tender and amazingly light, these potato rolls will become the perfect addition to your everyday menu or some weekend gatherings.
The mashed potatoes give these rolls soft texture and make them light as a feather.
It is recommended to serve these potato rolls with soups or vegetables.
Double the recipe for a large crowd since these potato rolls will disappear from your table in a flash.
- 1,5 tsp salt
- 2 tsp sugar
- 4-5 potatoes
- 2-3 tsp coconut flakes
- fresh parsley – to taste
- 1/2 tsp salt
- 100 ml water
- 1/2 tsp curcuma
- 2 tsp dairy butter
- 200 g (7 oz) flour
- vegetable oil (for frying)
Wash and peel potatoes. Boil the potatoes and mash them. Add coconut flakes, chopped fresh parsley, sugar, and salt. Mix everything carefully.
Let’s cook dough. Combine flour, curcuma, salt, and melted dairy butter. Pour water above and knead soft elastic dough. Cover the dough with a napkin and leave it for half an hour.
Roll the dough into a rectangle with 3-4 mm layer. Arrange the prepared potato mass above the dough. Fold the dough into a roll. Cut the roll into 1 cm pieces and arrange the pieces on a table dusted with flour.
Preheat vegetable oil on a frying pan. Fry the potato rolls until golden.
