Potato and chicken muffins

Low on time and ingredients? Don’t worry, we have the recipe which requires only two main ingredients – chicken and potato. Simple components and delicious results. That is something a little different than traditional second course but soo good. These potato pancakes with chicken and onion are cheesy, tender, savory, and ridiculously appetizing.

The muffins will become a great idea to pop into lunch boxes and enjoy at some family picnic. They are really an easy way to please almost everyone.

Ingredients:

  • 1 egg
  • 6 potatoes
  • 1 bulb onion
  • 1 chicken fillet
  • 150 g (5 oz) hard cheese
  • vegetable oil (for frying)
  • dairy butter (for greasing)
  • black ground pepper – to taste
  • oregano – to taste
  • salt – to taste

Cooking

Cut the chicken fillet into medium pieces. Preheat vegetable oil and fry the meat until half done. Season the chicken with oregano.

Peel a bulb onion and chop it finely. Peel potatoes and grate them. Add salt and black ground pepper to the potato. Then add an egg with the onion and mix until thoroughly incorporated.

Grate the hard cheese and set aside for a while.

Grease cake pans with warmed dairy butter. Squeeze the potato mixture to get rid of the excess liquid. Arrange the potatoes in cake pans and make some holes in the center. Put the fried chicken in the holes. Place the cake pans in the oven and bake muffins for 20-30 minutes. Then top them with grated cheese and put back in the oven for 10 minutes to let the cheese melt.
