Ukrainian pie – Povudlyanka

Povudlyanka – is a pie the main ingredients of which are preserves and semolina. You can use also jam but it is more fluid and you will have to bake the pie longer in that case.


  • 600 g preserves
  • 200 g semolina
  • 5 eggs
  • 3 tbsp sugar
  • 50 g dairy butter
  • 3 tbsp Madeira
  • 1 tbsp honey
  • 1 glass English walnuts


Grate yolks with 2 tbsp of sugar. Whip whites stiffly. Then add preserves, Madeira, and semolina to the yolks. Mix everything properly. Then add whipped whites carefully. Crush the walnuts and add them to the dough. Grease the baking tray with dairy butter and put the dough there. Level the dough. Powder it with sugar and pour with honey. Heat the oven and bake povudlyanka for 30-40 minutes at 180°C. If you use jam instead of preserves – bake the pie for 60-80 minutes at 140°C.
