The combination of chicken with fresh carrot, cucumber, pepper, bulb onion, parsley, lettuce leaves, egg and walnuts will become a good choice for you. You should notice that we are not using mayonnaise as a salad dressing. Instead, we mix olive oil with salt and pepper and get a simple and useful dressing. - 1 egg
- 1/2 carrot
- 1 cucumber
- 3-4 walnuts
- 1/2 bulb onion
- 1 sweet pepper
- 1-2 parsley twigs
- 250 g (1/2 lb) cabbage
- 1 chicken leg quarter (smoked)
- olive oil (for dressing)
- black ground pepper – to taste
- lettuce leaves – to taste
- salt – to taste
Wash all vegetables and dry them. Chop cabbage finely. Peel a cucumber and a pepper, then dice them. Peel a bulb onion, slice it and combine with the cabbage.
Hard boil an egg, peel and cube it. Finely shred a chicken leg quarter. Cut twigs and lettuce leaves. Peel walnuts and cut them in halves.
Toss the prepared ingredients together in a salad bowl. Season them with olive oil. Adjust salt and black ground pepper to your taste. Stir everything until well combined. Refrigerate the salad at least 20 minutes before serving.
