Smoked Chicken, Cabbage, Cucumber and Pepper Salad

Chicken meat is low in calories and nutritious at the same time. If you keep a healthy lifestyle and want to have a useful dinner to recharge your energies, then this recipe will come in handy. The combination of chicken with fresh carrot, cucumber, pepper, bulb onion, parsley, lettuce leaves, egg and walnuts will become a good choice for you. You should notice that we are not using mayonnaise as a salad dressing. Instead, we mix olive oil with salt and pepper and get a simple and useful dressing. Ingredients:

  • 1 egg
  • 1/2 carrot
  • 1 cucumber
  • 3-4 walnuts
  • 1/2 bulb onion
  • 1 sweet pepper
  • 1-2 parsley twigs
  • 250 g (1/2 lb) cabbage
  • 1 chicken leg quarter (smoked)
  • olive oil (for dressing)
  • black ground pepper – to taste
  • lettuce leaves – to taste
  • salt – to taste

Cooking

Wash all vegetables and dry them. Chop cabbage finely. Peel a cucumber and a pepper, then dice them. Peel a bulb onion, slice it and combine with the cabbage.

Hard boil an egg, peel and cube it. Finely shred a chicken leg quarter. Cut twigs and lettuce leaves. Peel walnuts and cut them in halves.

Toss the prepared ingredients together in a salad bowl. Season them with olive oil. Adjust salt and black ground pepper to your taste. Stir everything until well combined. Refrigerate the salad at least 20 minutes before serving.
