Spiced tomato sauce

This recipe is for those who like high-seasoned dishes. The hot tomato sauce perfectly completes the taste of fish, meat or vegetable dishes, make them more flavorful and appetizing. A small amount of sauce can impart a dish far cry, new taste. Usual and everyday meal can easily become fine cuisine. Be ready to create in your kitchen!

Ingredients:

  • 3 tbsp salt
  • 1 tsp allspice
  • 1/2 g cinnamon
  • 150 g (5 oz) sugar
  • 2-3 cloves of garlic
  • 150 ml vinegar (6%)
  • 2 kg (4,4 lb) tomatoes
  • 15 black peppercorns
  • 2 tbsp ground mustard
  • 100 g (3,5 oz) bulb onion

Cooking

Rinse and scald tomatoes, wash them under cool running water. Next peel the vegetables. Mash the tomatoes by the help of a wooden beetle.

Place half of the tomatoes and 75 g of sugar in an enameled pan. Boil down the mass. As far as water evaporates, add the remaining tomatoes and sugar. The tomato sauce should be cooked down during the process of boiling.

Peel bulb onions and cloves of garlic. Chop and mix the ingredients. Toss the onion, garlic, vinegar, salt, mustard, allspice and black peppercorns together. Add the mixture to the pan. Stir the sauce properly and continue to boil.

Transfer the hot sauce into sterilized jars. Cork up the jars and set them aside to cool. You may also use the tomato sauce right after cooking.
