Spiced vegetable pilaf

The combination of vegetables and rice is a good choice for those who lead a healthy life. So, if you want to have a light dinner or supper, then the recipe of this vegan pilaf can come in handy. In order to cook the dish we will stew such ingredients as a carrot, tomato, bulb onion, sweet pepper, green peas and sweet corn.

A special flavor to the dish imparts cinnamon and cardamom, so this pilaf is not only useful but also piquant.


  • 2 carrots
  • 2 tomatoes
  • 1 bulb onion
  • 1 sweet pepper
  • 2 glasses of rice
  • 4 tbsp green peas
  • 4 tbsp sweet corn
  • 4 cardamom pods
  • 1 cinnamon stick
  • vegetable oil (for frying)
  • fresh parsley – to taste
  • salt – to taste


Rinse rice, place it in a medium saucepan. Salt and dry the rice until it expands and water evaporates. Stir the mass constantly.

Pour 3,5 glass of water in a pan, bring it to boil, add the rice, a cinnamon stick and cardamom pods. Cover the lid and boil everything over low heat until the rice is done. Remove the cinnamon and cardamom.

Peel a bulb onion, carrots and a sweet pepper. Chop the vegetables. Dice tomatoes. Toss all the ingredients together. Add green peas and sweet corn. Brown everything in the vegetable oil slightly. After stir in the rice. Stew the mass 5 minutes more. Add the chopped fresh parsley, put the pilaf into plates and serve.
