Spring vegetable soup

This recipe of soup will evaluate the followers of healthy eating. If you want to cook something light and noncaloric for a dinner, then write down the recipe of this wonderful soup. First of all it contains a lot of useful vegetables. Second, the recipe is so easy that even inexperienced cookery specialist can manage to boil this soup.

Ingredients:

  • 1 carrot
  • 1 bulb onion
  • 2 celery roots
  • 2 bell peppers
  • 1 tbsp vegetable oil
  • 2 vegetable marrows
  • 250 g (1,5 lb) pickled tomatoes
  • 300 ml water
  • salt – to taste
  • caraway seeds – to taste
  • black ground pepper – to taste

Cooking

Peel a bulb onion, a carrot, bell peppers and vegetable marrows. Dice the vegetables. Slice celery roots. Heat vegetable oil in a frying pan and brown the vegetables a little. Pour water in pan. Add finely cut pickled tomatoes and the prepared vegetables. Season the soup with salt, pepper and caraway seeds. Stir the ingredients and boil the dish until done. The vegetable soup is done!
