Stir-fried pork with potatoes

This savory and flavorful potato and meat stir-fry is perfect for a weeknight meal. The recipe is easy and time saving. Tender pork flavored with black pepper and bay leaves and served together with crunchy potato slices it just delicious. A wonderful scent will emerge into the air while cooking and attract the attention of your housemates. Once your family members try this stir-fry, the dish will  be eaten so fast that you will wish you had more.

Ingredients:

  • 1 bulb onion
  • 2 bay leaves
  • 55 g (2 oz) salo
  • 400 g (14 oz) pork
  • 3 black peppercorns
  • 1/2 bunch of fresh dill
  • 700 g (1,5 lb) medium potatoes
  • black ground pepper – to taste
  • salt – to taste

Cooking

Peel, wash, and slice potatoes. Boil them for 10 minutes. Let the potatoes cool. Wash pork and cut it into medium pieces. Peel, wash, and chop a bulb onion finely. Rinse fresh dill and cut it. Cut salo into cubes.

Preheat a stew pan, add salo and warm it until hot but not smoking. Put the meat in the pan and cook it for 5 minutes. Then add the onion, bay leaves, and black peppercorns. Mix the ingredients carefully. Cook the mass for 5 minutes more. Add the potato to the stew pan. Adjust salt and black pepper to your taste. Stir everything thoroughly and cook the dish done, tossing occasionally.

Transfer the prepared mixture to a serving plate and top with fresh dill. Serve the dish hot.
