If you have not yet tried varenyky with meat and mushrooms then you definitely should do it today because I am going to share the recipe of this delicious Ukrainian dish with you. Soft veal and tender champignon make a perfect combination. These homemade varenyky with a thin dough and a good amount of flavorful feeling spiced with black and red ground pepper, bay leaf, and dried basil will not leave you indifferent. I

Ingredients:
- 4 eggs
- 1 bay leaf
- 800 g (28 oz) veal
- 200 g (7 oz) bulb onion
- 100 g (3,5 oz) sour cream
- 500 g (1,1 lb) wheat flour
- 100 g (3,5 oz) dairy butter
- 430 g (15 oz) potato starch
- 300 g (10,5 oz) champignons
- black ground pepper – to taste
- red ground pepper – to taste
- dried basil – to taste
- salt – to taste
Cooking
Combine wheat flour and potato starch. Stir in 4 eggs and mix everything. Add cold water gradually and mix the dough until it becomes homogenous. Place the dough on a floured surface and knead it until it will not stick to hands. Cover the dough with food wrap and let it stand under a room temperature for 20 minutes. Roll the dough in a layer with 3 mm breadth and cut out the rounds with 8 cm diameter using the rim of a large cup.
Pour 1,5 liter of water in a pan, add veal and boil it until done. Then salt the water, add a bay leaf and stir carefully. Set aside the meat broth.
Peel champignons and stew them together with sour cream over medium heat until they become soft. Salt and pepper the mushrooms.
Chop the boiled veal. Peel bulb onions and dice them. Combine the meat and onion (fry some onion separately). Mince the ingredients. Salt and pepper them. Add dried basil. Then add some broth. Mix everything carefully. Keep in mind that the stuffing should not become watery.
Spoon 1 tsp of the stuffing in the center of each round. Fold the dough over the filling and crimp the edges tightly. Repeat the procedure until you use all the ingredients.
Pour water in a pan, bring it to boil and add varenyky. Cook them for about 7 minutes until the dough is puffed. Transfer the boiled varenyky to a plate with the help of a slotted spoon. Top the dish with the fried bulb onion before serving.
