Ingredients:

Dough

  • 320 g flour 
  • 50 g flour (for sprinkling)
  • 2 egg yolks
  • 1 tbsp dairy butter 
  • 150 ml sparkling water 
  • 1/2 tsp salt 

Filling

  • 2-3 peaches
  • 180 g raspberries
  • 1 tsp sugar
  • 2 tsp raspberry jam

For serving

  • dairy butter – to taste
  • fruit jam – to taste

Cooking

Filling

Cut each peach shallowly crosswise, pour boiling water above for 5 minutes, and then dip peaches in cold water. After that, you can easily peel the peaches. Cut peaches in halves, pit them and cut the fruit pulp into cubes. Put the chopped peaches in a bowl, and add raspberries, sugar, and jam. Mix everything thoroughly.

Dough

Sift the flour into a separate deep bowl, make a little hole, pour the melted butter, and add the egg yolks and salt. Knead a soft elastic dough pouring sparkling water little by little. 

Cover the dough in a bowl with a towel, lid, or cling film and leave for 20-30 minutes so that the flour gluten swells better. In culinary, this is called – the dough is resting.

Fold dumplings

In half an hour, roll out the dough in a thin layer on a floured table and cut out circles with a glass or round cutter.

Place a portion of the fruit and berry filling on each circle, fold the dough in half and pinch the edges, forming dumplings.

Boil varenyky

Bring to boil salted water in a large saucepan, put dumplings into it in portions and cook for 2-3 minutes from the moment they float to the surface. The number of dumplings in a portion depends on the pan diameter – all floating dumplings should have enough space on the surface.

Remove the cooked dumplings from boiling water with a slotted spoon, put them in a deep bowl or makitra (large clay mixing bowl with a rough surface), and mix with dairy butter, so they don’t stick together.

Serve peach and raspberry dumplings in serving bowls, topping with jam to taste.
