Traditional cheese pancakes are undeniably tasty but today we are going to enliven the usual recipe for syrnyky (so Ukrainians call cheese pancakes) with a tender filling. We will make cottage cheese pancakes with apple and semolina filling. The combination of fruits and semolina taste like heaven. We will also add vanilla powder to impart our pancakes coziness.
Crispy and golden on the outside, creamy and fluffy on the inside, these pancakes taste extremely good. They are an elegant alternative for your standard family breakfast which soon will become a new breakfast favorite.
Ingredients:
- 1 egg
- 2 apples
- 1/4 tsp soda
- 3 tbsp flour
- 1,5 tbsp sugar
- a pinch of salt
- 2 tbsp semolina
- 2 tbsp dairy butter
- a pinch of vanilla powder
- 500 g (1,1 lb) cottage cheese
- 5 tbsp sour cream (for serving)
- vegetable oil (for frying)
- 3 tbsp sugar (for serving)
Cooking
Wash, peel, and core apples. Cut them into medium pieces. Preheat dairy butter in a frying pan and brown the fruits until golden. Add 1/2 tbsp of sugar at the end of frying. Stir to combine everything and transfer to a plate.
Whisk vanilla powder, egg, salt, and 1 tbsp of sugar in a separate bowl. Stir in cottage cheese and soda. Then add flour and semolina. Knead the dough, it should be soft and a little sticky. Leave the dough for an hour to let the semolina swell.
Dredge your table with flour. Take some dough with the help of a spoon and shape it in the form of a flapjack. Place some filling in the center of a flapjack and then join its edges in order to get a ball. Repeat the procedure until you use all the dough.
Fry the cheese pancakes on preheated vegetable oil until golden brown on both sides and puffed up.
Transfer the pancakes to a plate and serve them with sour cream and sugar on top.
