Ukrainian wheat buns Arnauty

Arnauty – Ukrainian wheat buns. These incomparable, soft and aromatic buns have very easy recipe. You can serve them with tea or coffee for breakfast. Also these buns are the ideal variant as a bread for a picnic.

Ingredients:

Sponge dough

  • 250 ml water
  • 250 g wheat flour
  • 1 tsp yeast-powder

Dough

  • 40 ml water
  • 250 g wheat flour
  • 30 ml mustard oil
  • 30 g sugar
  • salt – to taste

Cooking

Sponge dough

Sieve the flour, add yeast-powder and pour warm water above. Mix the ingredients. Cover the mixture with cling wrap and leave it for 3 – 3.5 hours.

Dough

Sieve the other part of the flour and add sugar, salt and water. Pour sponge dough to the dough and mix everything thoroughly. Add flour if necessary in order to get soft dough.Knead the dough 15 minutes but don’t add the flour.

Grease the hands with sunflower oil. Separate 4 pieces from the flour with 30g weight each. Roll the litlle balls, cover them with cling wrap and leave for 10 minutes. Separate the rest of the flour into 4 parts. Roll the balls and place them on a baking sheet covered with the cooking sheet. Make the “holes” in the center of each ball and place the little balls there. Cover the buns again and leave them for 1 – 1.5 hours again. They will increase significantly during this time.

Preheat the oven. Sprinkle the buns with water slightly. Place a baking sheet with water on the final layer of the oven. Bake the buns above the sheet with water on the grate at 240°C for 16 minutes.
