Juicy mutton


  • 500 g of mutton
  • 2.5 tbsp of dairy butter
  • 80 g of salo
  • 5 cloves of garlic
  • 1 tbsp of wheat flour
  • 1 tbsp of dairy butter
  • 2 glasses of broth
  • 1 tbsp of finely cut parsley
  • 4 g of allspice
  • 1 glass of haricot
  • 2 tbsp of tomato sauce
  • 1 bulb onion


Wash mutton and cut out the bones. Lard mutton with salo and rub it with garlic. Fry meat and then stew it in a deep stewing pan, adding half of the lard and some broth or water. Heat another part of lard and fry mutton on it.

Fry flour slightly. Add it to the juice in which mutton was stewed. Dilute with broth boiled on mutton bones. Add salt and pepper. Boil and then filter the broth. Pour mutton with cooked sauce and bring to boil.

Wash and soak haricot. Boil it and filter the broth. Fry cut bulb onion slightly, add tomato sauce and continue to fry for 4-5 minutes. Then add haricot broth (20 g for one portion), bring to boil, mix with boiled haricot, salt and warm properly.

Slice mutton, pour it with sauce and serve it with boiled haricot.
