Lemon Cream Pie

  • 2 eggs
  • 1 lemon
  • 4 tbsp flour
  • 5 tbsp sugar
  • a pinch of salt
  • 5 tbsp dairy butter
  • 100 g (3,5 oz) cottage cheese


  • 5 tbsp dairy butter
  • lemon juice – to taste
  • 1 cup of powdered sugar


Whip sugar and dairy butter until fluffy. Beat eggs separately. Add the eggs one by one to the mass. Peel a lemon and grate the lemon rind. Add the rind to the mass. Stir in flour and salt. Mix everything carefully.

Grease two baking trays with dairy butter. Separate the prepared dough into two equal parts and place them in the trays. Bake the pie crusts at 180°C (356°F) for 25-30 minutes. Then cool them.

Whip dairy butter until fluffy. Add powdered sugar gradually. Whip the mass. Then add lemon juice and stir to combine.

Place one pie crust on a serving plate. Grease it with the prepared cream. Then top the curst with the cottage cheese evenly. Place the second crust above and grease it with the cream.
