Mutton soup

The mutton soup has a bright flavour and scent due to the apposite combination of the spices and vegetables. This dish is nourishing and rich. You should take notice that the soup is also caloric and thick, thuswise it is intended for those who aren’t on diet.

Ingredients:

  • 400 g (14 oz) mutton
  • 300 g (10,5 oz) beans
  • 300 g (10,5 oz) potato
  • 2 bay leaves
  • 2 cups flour
  • a clove of garlic
  • 100 ml vegetable oil
  • 120 g (4 oz) bulb onion
  • 1/2 tsp ground paprika
  • a pinch of caraway seeds
  • a pinch of ground black pepper
  • sour cream (for serving)
  • 1,2 l (liter) broth
  • parsley – to taste
  • 1 tsp salt

Cooking

Cut mutton into equivalent medium pieces. Rinse, place the meat in a colander and wait till water drains. Peel bulb onions, chop and roast them on vegetable oil. Top the onion with ground paprika and pour water above. Stir everything and simmer. When the water evaporates, add the prepared mutton, black pepper, bay leaves and caraway seeds.

After peel and cut a clove of garlic finely. Salt the ingredients and add the garlic. Pour some broth above and cover the lid. Stew the dish, stirring continuously and

pouring the broth from time to time.

Peel potatoes and dice them. Cut the beans into medium pieces. Place the potatoes and the beans in a little saucepan with salted water. Cook the ingredients separately.

Toss vegetable oil and flour together. Add the prepared mass, beans, potato to the soup.

Ladle the dish in bowls. Top it with sour cream and chopped parsley. Serve the mutton soup hot.
