Pancakes with meat and pumpkin

Let’s cook the autumn breakfast. Such stuffing as tender mincemeat and stewed pumpkin will definitely like children and adults. By the way pumpkin is considered to be the vegetable with low calorific value and at the same time it contains the sufficient quantity of nutritional chemicals for a healthy diet. Enjoy these great pancakes with pumpkin and ground meat filling.

Ingredients:

  • 300 ml milk
  • 2 eggs
  • 1/2 tbsp sugar
  • 150 g (5 oz) flour
  • 1 tbsp sunflower oil
  • a pinch of salt

Stuffing

  • 100 g (3,5 oz) pumpkin flesh
  • 1 bulb onion
  • 300 g (10,5 oz) mincemeat
  • salt – to taste
  • ground black pepper – to taste
  • sour cream – to taste

Cooking

Crack the eggs into a bowl and whisk them with sugar and salt. Pour 150 ml of milk and sunflower oil in the bowl. Mix the ingredients thoroughly. Add flour gradually. Then pour the rest of 150 ml of milk stirring carefully the batter. Fry the pancakes on sunflower oil till golden color.

Stuffing

Peel bulb onion and fry it until it becomes soft. Add mincemeat. Fry the ingredients over medium heat for 2-3 minutes. Then place finely chopped pumpkin flesh in a frying pan. Mix and stew the ingredients until done. Taste and adjust salt and pepper to your liking.

Place 1 tbsp of stuffing above each pancake. Fold over the pancakes from the edges to form an envelope. Fry the pancakes with stuffing on the minimal quantity of sunflower oil till crisp.

Serve the pancakes hot with sour cream.
