Potato boats with chicken, tomato, and pepper

There is nothing like a plate full of potatoes stuffed with smoked chicken and vegetables. Baked and seasoned tomato, pepper, onion in combination with sour cream and boiled eggs are satisfying. Baked to potato skin perfection and topped with melty cheese, this dish is just fabulous.

Whether you have these potato boats for your dinner or serve them at your next party as a snack, there’s nothing quite as nourishing and appetizing. This dish will be perfect any time of the day and will be enjoyed by both children and adults.

Ingredients:

  • 2 eggs
  • 2 tomatoes
  • 10 potatoes
  • 1 bulb onion
  • 1 bell pepper
  • 1 tbsp vegetable oil
  • 1/2 bunch of parsley
  • 2 smoked chicken drumsticks
  • sour cream (for greasing)
  • red ground pepper – to taste
  • salt – to taste

Cooking

Peel and wash potatoes. Adjust salt to your taste and steam potatoes for about 25 minutes. Then let the potatoes cool.

Cube smoked chicken drumsticks. Boil, peel, and chop eggs finely. Wash a bell pepper and tomatoes. Dice the tomatoes. Core a bell pepper,  remove the seeds, and cube the pepper. Peel, rinse, and cut the bulb onion finely.

Cut each potato into 2 equal parts and scoop out some pulp carefully. Chop the cut out potato finely. Combine all the vegetables in one bowl. Then add washed and cut parsley. Dress everything with sour cream and season with red ground pepper.

Stuff the potato halves with the prepared filling and top them with grated cheese. Grease a baking tray with vegetable oil and transfer the prepared potato there. Bake the dish in your oven for about half an hour. Transfer the potatoes to a serving plate and decorate them with parsley. Serve the potato boats at once.
