Varenyky with pumpkin

We continue to enjoy the pumpkin season and today we are going to make yummy Ukrainian dumplings with pumpkin filling.

The piquant pumpkin lends earthy taste to the dish while the nutmeg gives it unforgettable flavor. Such a treat will be great to any fall occasion.

These varenyky are sure to bewitch your relatives and friends. They allow to embrace the flavours of autumn in one dish.

 

Ingredients:

Filling

  • 1/2 nutmeg
  • 1 bulb onion
  • 70 ml olive oil
  • 1 bunch of parsley
  • 5-6 cloves of garlic
  • 1 kg (2,2 lb) pumpkin
  • salt – to taste

Dough

  • 1 egg
  • 200 ml cold water
  • 500 g (17,5 oz) flour

Cooking

Pour cold water in a pan. Add an egg and stir to combine. Add flour gradually and mix thoroughly. Knead the dough until it becomes elastic and not sticky. Place the dough into a bowl, cover with a napkin and leave for 30 minutes.

Peel a pumpkin and dice it. Peel garlic cloves and squeeze them. Peel a bulb onion and chop it finely. Rinse parsley and cut it.

Preheat olive oil in a frying pan. Fry the garlic, onion, and parsley for 2 minutes, stirring continuously. Then add pumpkin, salt, and nutmeg. Mix everything carefully and cook. Then transfer the mass to a colander and let the excessive oil drain.

Roll the dough into 2cm layer. Cut out rounds with a 10 cm diameter. Place the filling in the center of each round. Seal the edges tightly to get a semicircle.

Repeat the procedure till you use all ingredients. While you are making other varenyky, keep the prepared varenyky covered with a towel, in that case they won’t dry out.

Bring salted water to a boil. Add the varenyky and cook them until they come to surface (after that boil them for 10 minutes more).

Serve the varenyky hot with sour cream or topped with grated cheese.
