Beef cutlets (recipe from Poltava)

If you like Ukrainian cuisine, then you have definitely heard about recipes from Poltava. This district is considered to be a heart of Ukraine where numerous stories start. Most culturologists insist that Poltava is a motherland of Ukrainian cuisine. In years to come, other districts adopted culinary experience and started to cook Poltava dishes with own particularities.

The stars of today’s recipe are traditional beef cutlets. This easy and tasty dish will be awesome appetizer or second course for your family. Besides, it doesn’t require numerous and rare ingredients. Vice versa, to cook beef cutlets you need only meat, pork fat, and spices. And of course, a short while for cooking.

Ingredients:

  • 450 g (16 oz) of meat (beef)
  • 50 g (2 oz) of salo/salted pork fat
  • 3-4 cloves of garlic
  • black ground pepper– to taste
  • salt – to taste
  • 2-3 tbsp of dried breadcrumbs
  • 2-3 tbsp of beef fat
  • 1 tbsp of dairy butter

Cooking

Purify beef from the film, pass it twice through a meat grinder, add water, chopped salted pork fat, mashed garlic, black ground pepper, salt and mix everything. Form the minced meat into the meatballs. Coat them with the breadcrumbs and fry. Serve cutlets with roasted potatoes, poured with melted beef fat.
