Aubergine paste


  • 1 kg of aubergines
  • 200 g of apples
  • 2 tbsp of sunflower oil
  • 1 tsp of vinegar
  • 2 bulb onions
  • 1 tbsp of sugar
  • salt – to taste
  • black ground pepper – to taste


Peel aubergines, wash them under cold water, place on a baking tray greased with oil and bake in an oven. Peel one bulb onion and fry on sunflower oil. Peel the second bulb onion and grate it. Combine the aubergines, onion, finely cut and peeled apples, sugar, salt, pepper, vinegar, and sunflower oil together. Mix the ingredients properly.

Serve the cooked aubergine paste as a separate dish.
