The history of this recipe comes from the Southern Ukraine, town Kherson. The eggplants cooked with this recipe are rather piquant. They will become a good solution to serve as an appetizer at some picnic of family gatherings.
The advantage of this dish is that it can be quickly prepared and you won’t need many ingredients. However the result is awesome. Juicy golden-fried eggplants with a savory pepper-garlic sauce.
- 2 eggplants
- 1 bell pepper
- 1 chili pepper
- 2-3 garlic cloves
- 2 tbsp apple vinegar
- vegetable oil (for frying)
- salt – to taste
Peel, wash, and slice eggplants thinly. Wash peppers and grate them. Peel garlic cloves and squeeze the garlic. Combine the peppers, garlic, apple vinegar, and salt. Stir everything carefully.
Preheat vegetable oil in a frying pan. Transfer the prepared mixture there. Add the sliced eggplants and fry them until golden. Serve hot.
Transfer the cooked eggplants to jars, pressing down with a fork to remove any air. Pour vegetable oil into the jar until all the ingredients are covered. Seal the jar.
