Baked Potatoes with Champignons and Tomatoes

It is light, comfortable, and unbelievably tasty dish cooked with mushrooms. We will also add tomatoes to impart an extra piquant flavor to this dish.

Champignons and onion are browned together. Then they are baked with tender potato and juicy tomatoes until golden.

 Creamy and flavorsome, this dish will become the perfect idea for brunch.

Ingredients:

  • 2 tomatoes
  • 1 bulb onion
  • 5 tbsp sour cream
  • 5 tbsp vegetable oil
  • 700 g (25 oz) potatoes
  • 300 g (10,5 oz) champignons
  • black ground pepper – to taste
  • salt – to taste

Cooking

Peel a bulb onion and chop it finely. Preheat vegetable oil and brown the onion. Transfer the onion to a plate.  Peel, wash, and slice mushrooms thinly. Fry them in the frying pan where you browned the onion.

Peel, wash, and slice potatoes into circles. Wash tomatoes and cut them into quarters.

Grease a baking sheet with vegetable oil. Arrange some potatoes there. Season them with salt and pepper. Put the fried champignons and onion above. Then put the  second layer of potatoes. Place the cut tomatoes above. Top everything with the remaining potatoes. Season the ingredients with salt and pepper. Grease the potato with sour cream.

Bake the dish in a preheated oven at 180°C (356°F) until golden crust, about 40 minutes.
