Beetroot and Horseradish Appetizer with Lemon Dressing

Ingredients:

  • 1/2 lemon
  • 1/2 tsp sugar
  • a pinch of salt
  • a parsley twig
  • 50 ml vegetable oil
  • 400 g (14 oz) beetroot
  • 15 ml apple cider vinegar
  • 50 g (4 tbsp) grated horseradish
  • black ground pepper – to taste

Cooking

Place beetroots in a pan. Pour them with water and boil for about an hour. Then cool the beetroots, peel them and grate finely. Squeeze the fresh lemon to get lemon juice. Toss the prepared beetroot and horseradish together. Dress the mass with the lemon juice, apple cider vinegar, and vegetable oil. Add sugar, salt, and pepper to the appetizer. Toss gently to combine. Transfer the appetizer to a serving bowl and decorate it with a parsley twig.
