Varenyky with potato, sulguni, and sun-dried tomatoes

Varenyky are a Ukrainian national dish. It is hardly possible to find a person in our country who doesn’t like varenyky. The recipe for traditional varenyky with meat, potato, cabbage, cheese, and cherry filling is known in every family. However, the time for something new has come. Today we are going to cook dumplings with potato, cheese, and tomato filling and give varenyky an unusual and rich taste. In addition, we will brown the varenyky before serving therefore making them crisp and irresistibly appetizing.

Ingredients:

  • 1 bulb onion
  • 500 g (1,1 lb) potato
  • 10 sun-dried tomatoes
  • 300 g (10,5 oz) sulguni
  • vegetable oil (for frying)
  • 3 tbsp sour cream (for serving)
  • black ground pepper – to taste
  • salt – to taste

Dough

  • 1 egg
  • 200 ml water
  • 800 g (28 oz) wheat flour
  • salt – to taste

Cooking

Peel a bulb onion and wash it. Cut the onion into semi-circles and fry in vegetable oil until golden. Rinse and peel potatoes. Cut them in halves and put in a pan with boiling water. Salt the potato and boil until done.

Cut sulguni into cubes and combine with the onion. Mince the mass thoroughly and salt it to your taste. Add finely cut sun-dried tomatoes and stir everything thoroughly.

Let’ cook dough. Sift flour in a deep bowl. Make a little hollow in the center of flour. Add there egg and salt. Then pour water above and mix everything carefully. Knead the dough until it becomes elastic and firm. Pay attention to the fact that the dough should not stick to your hands. Transfer the prepared dough to the bowl again and cover it with plastic food wrap. Leave the dough for 20-30 minutes.

Roll the dough and cut out the circles. Put the prepared filling in the center of each circle and crimp the edges tightly. Repeat the procedure until you use all the ingredients.

Dip the varenyky in boiling water and cook them until they come to surface. Then transfer the varenyky to a plate and let them cool a little. Preheat vegetable oil in a frying pan meanwhile. Golden brown the varenyky and put them on a serving plate. Serve the varenyky hot with a generous dollop of sour cream.
