Cabbage, cucumber, and tomato salad dressed with olive oil

Spring is in full swing and we can enjoy the natural flavors of veggies. Today we’re going to cook a light and fresh vegetable salad that is an excellent source of vitamins. The ingredients of this salad are usually on hand and easy to mix, but the result is stunning.

Combining soft, young cabbage with crunchy cucumbers and moist tomatoes, this salad is the contrast of tastes.

Ingredients:

2 tomatoes

2 cucumbers

1/2 of bulb onion

3-4 parsley twigs

2 tbsp of olive oil

1/2 head of young cabbage

ground black pepper – to taste

vinegar – to taste

salt – to taste

 

Cooking

Wash a head of cabbage, shred it, and transfer to a bowl. Pour above vinegar and add salt. Mix everything carefully and squeeze the cabbage with your hands until some juice appears. Set aside for a while.

Wash tomatoes, cucumbers, and parsley. Peel and dice cucumbers. Cut tops off the tomatoes and slice the tomatoes into quarters. Chop a bulb onion. Put all ingredients in the bowl with the cabbage and stir to combine. Dress the salad with olive oil, season it with ground black pepper, and decorate with fresh parsley. Let the salad sit for 10 minutes.

You can serve this cucumber, onion, and tomato salad with your choice of main dish. It also pairs well with meat and fish.
