This stewed eggplant and bell pepper mixture is a crowd pleasing appetizer that works perfectly as for everyday dinners as for family holidays as for friends’ parties.

- 1 tbsp sugar
- 1 bell pepper
- 1 bulb onion
- 1 tbsp starch
- 2 garlic cloves
- 1 tsp tomato paste
- 3 medium eggplants
- 1/2 cup of soy sauce
Wash eggplants and dice them. Peel a bulb onion and chop it. Rinse, peel, and slice a bell pepper. Combine the pepper and onion in a frying pan and cook until the onion becomes translucent. Then add the eggplants. Stir to combine. Cover the lid and stew the ingredients until done.
Mix soy sauce, sugar, tomato paste, and starch. Then add peeled and squeezed garlic. Pour the prepared sauce above the vegetable mass and stir.
