Pumpkin Apple Pancakes with Cinnamon

These warm and satisfying pancakes packed with vitamins are a perfect idea to start your day with a hearty and tasty breakfast.

The pancakes have soft apple filling. The pumpkin mash gives them a light and subtle flavor while cinnamon adds a fragrant note to the whole dish.

These pancakes are so tasty by themselves that you can serve them without any jam or sauce. They are perfectly good just topped with powdered sugar.

Make little efforts and you’ll get absolutely scrumptious pancakes anyone will enjoy.

Ingredients:

  • 2 eggs
  • 3 apples
  • 9 tbsp flour
  • 1/4 tsp soda
  • 400 ml milk
  • 2,5 tbsp sugar
  • 4 tbsp pumpkin mash
  • 1/2 tsp ground cinnamon
  • 80 g (5,5 tbsp) dairy butter
  • powdered sugar – for serving
  • vegetable oil – for frying

Cooking

Combine raw eggs with sugar and cinnamon. Whip the ingredients carefully until smooth and fluffy. Add pumpkin mash and melted dairy butter. Stir to combine.

Wash and peel apples. Remove the cores and grate the apples. Add the fruits to the batter. Mix everything. Combine flour and soda. Stir in the mixture to the batter. Pour milk above and mix the ingredients.

Preheat vegetable oil in a frying pan and pour 1/4 cup of batter per pancake onto the pan. Cook the pancakes about 2 minutes per side turning only once. Continue to fry the pancakes until you use all the batter. Top them with powdered sugar before serving.
