Baked salo



  • 1 kg salo / belly bacon
  • 10 black-eyed peas
  • 2 tsp coriander seeds
  • 5 bay leaves
  • 1-2 garlic cloves


Cut salo or belly bacon into long pieces. Peel garlic and chop it finely. Combine the garlic, black-eyed peas and coriander seeds. Force salo with the prepared mixture. Then rub each piece of salo with salt and pepper. Roll the pieces of salo in foil. Place them in a roaster. Bake salo in an oven for 1 hour.

Then cool it, cut into slices and serve as appetizer.
