Pinnyk – is a Ukrainian dessert cooked of fruits and berries passed through the sieve and mixed together with whipped whites of eggs. Soft and airy texture, deep and rich flavor – this is the way pinnyk tastes!
The pinnyk we’re baking today has a tender pink color and the savor of fresh raspberries and strawberries. Its recipe is very simple and takes a little time. Plus, this cake includes easy-to-find ingredients, which makes it the number-one solution when guests are on the doorstep.
Ingredients:
- 8 whites of eggs
- 185 g (6,5 oz) sugar
- 1/2 tsp of dairy butter
- 1 kg (35 oz) raspberries
- 1 kg (35 oz) strawberries
- 1 tbsp of powdered sugar
- fresh berries and mint twigs (for decoration)
Cooking
Wash raspberries and strawberries carefully. Remove leaves and stems. Then push the berries through a sieve. Top the mixture with sugar and stir until smooth.
Whisk whites of eggs thoroughly and add them to the berry mass. Take a baking dish and grease it with soft dairy butter. Transfer the prepared mixture there and smooth it with a spoon. Sprinkle with powdered sugar and put the dish in an oven. Bake the cake for 15 – 20 minutes. Decorate it with berries and min twigs before serving.
