Pumpkin stuffed with meat and vegetables

Pumpkin – is a healthy and nourishing vegetable using which you can cook many delicious dishes. You can fry, boil, bake, and stuff pumpkin. One of the most widespread recipes is considered a stuffed pumpkin. It is a rather easy and very tasty dish. The fillings could vary depending on your taste. Today we will cook the pumpkin stuffed with meat and vegetables.

Ingredients:

  • 4 kg (8.8 lb) pumpkin
  • 1,5 kg (3.3 lb) meat
  • 4 celery stalks
  • 2 red bulb onions
  • 1 carrot
  • 1 marrow squash
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 tomatoes
  • 1 clove of garlic
  • thyme – to taste
  • basil – to taste
  • rosemary – to taste

Cooking

Wash a pumpkin and cut the top of it. Remove the flash, rub the prepared pumpkin with a clove of garlic and top it with thyme, basil, and rosemary.

Rinse and cut meat finely. Peel red bulb onions and chop them. Wash celery stalks and dice them.

Stew the onion and celery. Brown the meat in a separate skillet. After combine the ingredients and stew them together.

Place the pumpkin and its top in an oven preheated to 180°C (356°F)  and cook for 20-30 minutes. Bake the mixture of pumpkin flesh, peppers, and tomatoes separately. Then cool the vegetables, cut them finely, and combine with the prepared meat.

Peel a carrot and marrow squash. Chop the ingredients and filling carefully. Stuff the hollowed-out pumpkin with the prepared mass. Place the pumpkin on a baking tray and cover it with foil. Cook the pumpkin for 25 minutes, after remove the foil and bake 10 minutes more. Serve the dish hot.
