Pancakes with Brynza (Feta Cheese) and Tomatoes

This dish has a very unusual combination of tastes thanks to the use of juicy tomatoes and salty brynza or feta cheese as a filling. The recipe is easy, so you can cook such pancakes for a light breakfast or supper and surprise your family with an interesting stuffing. You can serve these pancakes as an appetizer at some party as well.

Ingredients:

  • 2 eggs
  • 250 ml milk
  • 160 g (5,5 oz) flour
  • a pinch of salt
  • 1 tbsp sunflower oil
  • dairy butter (for frying)

Filling

  • 6 tomatoes
  • parsley twigs – to taste
  • sour cream (for serving)
  • 150 g (5 oz) brynza (feta cheese)
  • red ground pepper – to taste
  • salt – to taste

Cooking

Combine 2 eggs, a pinch of salt, 1 cup of milk, and 1 cup of flour. Stir the ingredients carefully to form a smooth batter with no lumps. Its consistency should be similar to that of sour cream. Add additional flour or milk if necessary. Then add sunflower oil and mix everything again.

Preheat dairy butter in a frying pan over medium heat. Add 1 tablespoon of the batter to the pan. Flatten slightly. Fry the pancakes on both sides until golden and cooked through. Repeat the procedure till you use the whole batter.

Wash tomatoes and slice them thinly. Slice brynza or feta cheese. Place one pancake on a plate. Arrange the slices of tomatoes and cheese above. Sprinkle everything with red ground pepper and salt. Cover the ingredients with the other half of the pancake. Stuff the remaining pancakes. Decorate the pancakes with parsley twigs and serve them with sour cream.
