We offer you the recipe of the Ukrainian pie with a delicious combination of vegetables, mushrooms and melted cheese. Taste this toothsome pie “Vegetable basket” and you will love the Ukrainian cuisine on the spot.
- 4 eggplants
- 2 carrots
- 1/3 glass of pumpkin
- 4 tbsp vegetable oil
- 1 tsp salt
- 1/2 glass of flour
- 100 g (0,22 lb) cheese
- 2 big tomatoes
- 2 eggs
- 150 ml milk
- 200 g (0,44 lb) little champignons
- a pinch of ground nutmeg
- a pinch of ground black pepper
- parsley – to taste
Peel and grate eggplants. Salt them and leave for a couple minutes. Pout out the emerged juice and transfer the eggplants to glasses (you should get two glasses of the grated vegetables).
Peel carrots and a pumpkin. Grate the ingredients and pour out the juice. You should get 1 glass of carrot and 1/3 glass of pumpkin.
Toss all the prepared ingredients together. Add vegetable oil and flour. Mix everything properly. Pour the mass in a baking cup greased with dairy butter. Place the dish in an oven and bake it at 190°C (374°F) for 25 minutes. Then add grated cheese and boiled little champignons above.
Beat eggs with milk. Add nutmeg, ground black pepper and salt. Pour the mixture above the pie. Wash tomatoes and cut them in the form of circles. Fry them slightly on both sides on vegetable oil. Put the vegetables above the pie. Then bake it at 180°C (356°F) for 20 minutes. After cooking top the pie with chopped parsley.
You can serve it as hot as cold.
Tip! If you don’t like some of the vegetables you can substitute them with your favourite ones.
