Potato cutlets (Kyiv recipe)



  • 1 kg of potato
  • 1.5 tbsp of dairy butter
  • 2.5 tbsp of fat
  • 1 glass of milk
  • 2.5 tbsp of wheat flour
  • 2 tbsp of potato starch
  • 2 eggs
  • 20 g of dried mushrooms
  • 4 tbsp of dried breadcrumbs


  • 15 g of dried mushrooms
  • 0.5 tbsp of wheat flour
  • 0.5 tbsp of fat
  • 2 onions
  • 1 tsp of dairy butter


Boil peeled potatoes and grind them through the sieve. Add raw eggs, starch, and salt. Sift flour, fry it slightly and dissolve the flour with boiled milk. You should get a dense sauce. Then boil it and mix with chopped boiled mushrooms.

Combine the boiled potato mass with the milk sauce and divide it into portions, shaping each portion in the form of a cutlet (rissole).

At first roll cutlets in the flour, then in the eggs, and at the end in the dried breadcrumbs. Fry cutlets until they get a golden color.
