Potato cutlets in Ukrainian style – Zrazy

Classic zrazy – are meat cutlets or rolls stuffed with rice, buckwheat, mashed potatoes, etc. Yet today we are going to cook potato zrazy (potato cutlets) with an egg and onion filling.


  • 1 kg (35 oz) potato
  • 50-55 g (2 oz) dairy butter
  • 2 eggs
  • 100 g (3,5 oz) flour
  • 200 g (7 oz) lard
  • 200 ml sour cream


  • 50 g bulb onion
  • 50-55 g (2 oz) 4 eggs
  • sour cream
  • salt – to taste
  • black ground pepper – to taste


Peel potato and mince it. Add eggs and dairy butter. Mix the mass thoroughly. Shape the “balls” from it. Place the stuffing in the center of each ball.


Peel, slice, and fry bulb onion. Cut hard-boiled eggs and add bulb onion.

Join the edges of the “balls”, coat them with flour and fry zrazy from both sides on the lard. Pour zrazy with sour cream and serve.
