Veal and Fresh Vegetable Soup

For a family gathering, what can be better than good comfort food? Cooking this hearty soup, you will be able not only to feed all your family members but also to surprise them with a delicious, flavorful and at the same time healthy soup.

It is loaded with fresh vegetables which we will stew in an oven in order to preserve all their useful vitamins and minerals. One more important ingredient of our soup is young veal which is so tender that it will melt in your mouth. In addition, this soup is really easy to make and cooking of this dish will not take much of your time since cutting of all the ingredients is rather a simple task.

Ingredients:

  • 1 carrot
  • 1 eggplant
  • 2 potatoes
  • 1 bulb onion
  • 3 cloves of garlic
  • 1 tbsp dairy butter
  • 1 fresh red pepper
  • 2 medium tomatoes
  • 500 g (1,1 lb) young veal
  • black ground pepper – to taste
  • fresh parsley – to taste
  • spring onion – to taste
  • salt – to taste

Cooking

Peel a bulb onion and chop it finely. Cut veal into cubes. Wash all vegetables. Chop tomatoes coarsely. Peel an eggplant and potatoes. Cube the ingredients. Peel a carrot and grate it. Cut a pepper into little cubes. Toss all the prepared ingredients together. Place the mass in pots (fill 2/3 of each pot). Peel and squeeze garlic. Add the garlic to each pot.

Pour water in a pan and bring it to boil. Add dairy butter and black ground pepper. Stir the mixture and pour it to cover all the ingredients in the pots. Cover the pots with the lids and place them in an oven. Stew the ingredients at 180°C (356°F) for about an hour. Top the soup with chopped parsley and spring onion before serving.
