Apple pie with a lemon juice

Autumn is a great time to try new recipes for comforting pies. Thanks to the abundance of apples we can cook various desserts with this great fruit. Many of us have enjoyed the traditional apple pie many times but today we are going to make a luscious apple tart using kefir which will make the dessert amazingly fluffy and tender.

Flavored with vanilla sugar and lemon, this pie is more tempting.

Ingredients:

  • 2 eggs
  • 1 tsp soda
  • 1/4 lemon
  • 4-5 apples
  • 1 cup of kefir
  • 1 cup of sugar
  • 3 tbsp corn flour
  • 1 tsp vanilla sugar
  • 1 tsp apple vinegar
  • 1 cup of wheat flour
  • 30 g (1 oz) dairy butter
  • dairy butter (for greasing)

Cooking

Cover a baking tray with parchment paper and grease it with dairy butter. Put the tray in a fridge in order to prevent the melting of dairy butter.

Rinse, peel, and cut apples into medium pieces. Squeeze a lemon and sprinkle apples with the juice. Add sugar (to your taste) and corn flour. Mix everything carefully and set aside for a while.

Whip two eggs with 1 cup of sugar with the help of a mixer, adding sugar gradually. Then add 1 tsp of vanilla sugar and stir to combine. You should get a stable foam. Add melted dairy butter and mix everything carefully with the help of a mixer. Then pour kefir to the mass and stir it using a spoon. Then add sifted flour gradually stirring the mass continuously. The batter should be smooth with no lumps.

Combine soda with apple vinegar and add the mass to the batter. At the end the batter should have a consistency similar to sour cream.

Pour half of the batter into the tray and leaven it. Arrange the apples above. Top everything with the remaining batter. Preheat your oven to 180°C (356°F) and bake the pie for half an hour there. Check whether the pie is already baked or not with the help of a toothpick. Serve the dessert warm.
