- 1 kg salo with skin (fresh pork with layer thickness – 2 cm)
- 4-5 cloves of garlic
- salt – to taste
- ground black pepper
- ground red pepper
- bay leaf
The belly bacon will not be appropriate for this recipe because the skin should be easily trim away.
Cut the skin from salo. Dredge salo with spices on both sides. You need to rub salo with salt intensely. Peel and cut garlic in the form of “petals”. Dredge salo with garlic. Roll salo and fold it in the pork skin. Loop around salo a thread.
Then place salo in the foil or in a cooking bag. Put the roll on a baking sheet. Place salo in the preheated oven and bake it at 160-180 °C.
Put rolls on the grate in order to let the drippings flew off after baking. Place cooled roll in the refrigerator for one hour.
